Why Sourdough?

Sourdough makes gluten taste great. It also makes it a bit easier to digest, as the microbes digest some of the gluten for you while slowly fermenting on your countertop. It sounds weirder than it actually is.

Bread from the store often contains around twenty ingredients, many are which hard to digest preservatives. Sourdough contains three ingredients, flour, sal & water. I'd say that's reason enough to givenit a try.
